Brunch Breakfast Pizza

This is a brunch show stopper. We start with a hash brown crust that is like a potato pancake. Next, there are three meats: bacon, sausage, and ham. Then we add some white cheddar cheese and some pepper jack cheese so that we get the real look of a traditional pizza. With all that some hot sauce and some jalapeño pepper bring some heat to break up the richness. I hope you like it.

32 ounce shredded potatoes
1/2 yellow onion diced
2 eggs
1/4 cup flour
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 bunch green onion diced
6 strips bacon cooked
1 cup sausage crumbled
4 slices ham diced
1/2 cup pepper jack cheese grated
1 cup white cheddar grated
1 jalapeño sliced thin
1/4 cup taco sauce
Cooking spray

4 eggs, scrambled

Green onion, diced (optional)

Heat oven to 400.

In a bowl add potatoes, onion, flour, 2 eggs, salt, pepper, and garlic powder; mix to combine.

Spray pizza pan with cooking spray.

Place mixture on a round 12” pizza pan and flatten.

Bake for 15-20 minutes or until bottom is brown.

Add cheeses.

Add bacon, sausage, and ham.

Add jalapeño slices.

Bake for 15 minutes.

Add scrambled eggs.

Cut in squares.

Serve with taco sauce.

    Were the potatoes cooked or raw when you shredded them? Did you use russets or waxy potatoes?
