Faux Lobster Roll

I like illusions in food. This looks like a lobster roll but in reality is a yellow cake with strawberries shaped like lobster parts. The yellow cake has butter instead of oil for better browning and extra vanilla for more flavor and cooked in mini muffin pans to resemble buns. Strawberries mixed with cream cheese frosting to make it look like lobster. I hope you like it.

1 box yellow cake
1 cup water
1/3 cup melted butter plus 1 tablespoon
1 teaspoon vanilla
2 eggs beaten
16 ounces strawberries
8 ounces butter
8 ounces cream cheese
1 teaspoon vanilla
4 cups powdered sugar
1 pinch salt

Heat oven to 350.

Mix cake mix, melted butter, water, and vanilla until smooth.

Spray corn muffin or square pan with cooking oil.

Add batter until 2/3 full.

Bake for 13-16 minutes.

Let cool for 10 minutes and remove to a cooling rack.

In a bowl mix cream cream cheese and butter. Add salt.

Add powdered sugar 1 cup at a time and mix until incorporated.

Reserve 10 best strawberries and cut to resemble lobster claws.

Cut remaining strawberries in pieces.

Add to cream cheese frosting.

Cut v in the top of cupcake.

Add frosting mixture to top cupcakes.

Top with claw.

Serve.
