Pumpkin Spice Bacon

This one shreds my man card, but it works damnit. We start with salt smoked cured bacon from A to Z Butcher. Then the pumpkin spices: cinnamon, allspice, and clove bring the fall flavor. I added maple syrup to bring some sweetness to the smoky salty party. I added just a touch of black pepper, so you think to yourself what am I tasting? I hope your cardiologist likes it.

1 pound sliced bacon
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon clove
1/2 teaspoon black pepper
1/2 teaspoon cardamom
1/4 cup maple syrup

Heat oven to 400 degrees.

Mix cinnamon, clove, allspice, black pepper, and cardamom in a bowl.

On a broiler pan lay out bacon strips.

Rub bacon with spice rub.

Brush with maple syrup.

Bake for 15 minutes.

Turn bacon over and brush with maple syrup. Bake until desired crispness, 10-12 minutes.

Serve. Take a cholesterol test.
