This is a mash up of two great desserts, so you are making two desserts. Rich fudge on top of a dense brownie. I did this one without nuts because two of the crash test dummies are allergic to nuts. Each dessert can carry its own weight: both are chocolatity and full of flavor. My touches are coffee, chocolate vodka in both, and dark chocolate chips with some coco nibs to add a touch of bitterness to counter all the sweetness. I hope you like it.
Brownies:
1 cup sugar
1/2 cup melted butter
1/3 cup cocoa powder
1 tablespoon cocoa nibs
1/2 cup flour
2 eggs
1/4 teaspoon salt
1 teaspoon vanilla
1 teaspoon cinnamon extract
Or use a mix but add the extract.
Fudge:
1 1/2 cups sugar
1 stick unsalted butter
1 tablespoons corn syrup
3 ounces evaporated milk
1 teaspoon chocolate vodka
1/2 teaspoon salt
6 ounces dark chocolate chips
4 ounces marshmallow fluff
Brownies:
In a bowl mix flour, salt, sugar, cocoa nibs, and cocoa powder and mix.
Add melted butter, eggs, vanilla, and chocolate vodka.
Mix to combine and heat oven to 350.
Pour into a 8 x 8 baking pan.
Bake for 25-30 minutes. Let cool and place in freezer for 1 hour.
Fudge
In a large heavy skillet add butter, sugar corn, syrup, salt, and evaporated milk.
Bring up to medium heat and bring to a boil stir constantly.
Cook for 6 minutes boiling. Remove from heat stir continuously.
Add chocolate chips and stir until incorporated.
Add marshmallow fluff and stir until incorporated.
Add vodka. Stir.
Tired of stirring?
Remove brownie from freezer.
Top with fudge. Let cool for 1 hour before cutting.
Cut and serve.
