Seafood Burrito

Crab, lagostino, and scallops in a queso sauce topped with enchilada sauce topped with cheese. There is some taco seasoning with some guacamole. Simple for a weeknight supper. I hope you like it.

4 burrito wrappers
12 ounces queso
12 ounces bay scallops, defrosted
8 ounce lump crab meat
8 ounces lagostino meat, defrosted
3 tablespoons taco seasoning
32 ounce can enchilada sauce
12 ounce grated white cheddar cheese
8 ounces guacamole

Heat oven to 350.

Lay out wrapper.

In a bowl add crab meat, scallops, and lagostino with queso cheese. Mix.

Add seafood mix to wrapper; don’t overfill.

Make 4 and place in a 13 x 9 baking dish.

Top with enchilada sauce.

Top with grated cheese.

Bake for 30 minutes at 350.

Serve with guacamole.
