Pesto Potatoes Plus

Here is a different side dish. More Sunday dinner than weeknight but it does have a lot of flavor. I started with fingerling potatoes boiled, crushed, and seasoned. Air fried with pesto with our secret ingredient anchovy paste. It is then finished with Romano cheese. I hope you like it.

1 pound fingerling potatoes
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon salt substitute
4 ounces pesto
1 teaspoon anchovy paste
1/4 cup Romano cheese
Cooking spray

In a large saucepan add potatoes and salt; cover with water and boil for 20 minutes until fork tender.

Drain and smash each potato.

Add to air fryer basket. Add salt, garlic powder and salt substitute. Spray with cooking spray.

Air fry for 9 minutes at 350 degrees.

Sprinkle with Romano cheese and sprinkle with pesto.

Air fry for an additional 6 minutes at 350.
