Cosmic Brownies

My younger daughter said some co-workers asked her to ask me for a Cosmic Brownie recipe. There are many versions of this, but of course I do my own spin on things. I added dark cocoa powder and chocolate vodka because no one has ever said, “This is too chocolaty.” Most people around 30 will remember these in your junior high lunch box. I hope you like it.

1 stick butter
1/3 cup dark chocolate powder
2 tablespoons canola oil
5 ounces bitter sweet chocolate chip
2/3 cup sugar
1/3 cup brown sugar
2 eggs room temperature
1 teaspoon chocolate vodka
1/2 cup ap flour
1/2 teaspoon salt
Topping:
6 tablespoons bitter sweet chocolate
1 pinch salt
6 tablespoons cream
Candy sprinkles for taste

Cream butter, sugar, and brown sugar together for 3 minutes.

Add eggs and chocolate vodka, and beat until smooth.

Add flour and cocoa powder and mix until combined.

Add chocolate chips and salt.

Place in an 8 x 8 baking pan.

Bake for 20-25 minutes.

Let cool.

In a microwave safe bowl add salt, chocolate chips, and cream; microwave in 25-second bursts, stirring after every time until smooth.

Pour chocolate mix over brownies

Top with sugar candies.

Cut and serve.
