Potatoes O’Brian via Waffle House

This Is my nod to St. Patrick’s Day and the dishes of Ireland. Potatoes O’Brien contains potatoes, red peppers, green peppers, which aren’t from Ireland at all. They all came from the New World. The most Irish thing in this dish is the cheese and that’s not part of the original dish that’s just something I stole from the waffle house. I added some bacon, onion, garlic pepper and Old Bay. I hope you like it.

16 ounces shredded potatoes
1/4 cup green pepper diced
1/4 cup red pepper diced
1/3 onion diced
3 cloves garlic minced
4 slices bacon
1/4 cup cooking oil
1 teaspoon Old Bay seasoning
1 teaspoon black pepper
1/2 cup Irish cheddar cheese
6 tablespoons butter

In a bowl add potatoes, red peppers, green peppers, and onions and mix with hands.

I a large nonstick skillet add bacon and cooking oil. Cook bacon until crispy and remove to a paper towel to drain.

Add potato mixture and cook until bottom starts to brown. Add bacon and turn over. Try to not turn it for at least 5 minutes, don’t play with your food.

Turn over and add butter pats.

Cook until bottom is brown add Old Bay and pepper.

Add cheese.

Serve.
