This is a follow on recipe from a couple of weeks ago using a cake mix as a starter. I was feeling springy so strawberry’s came to mind. Now I said quick and if you have strawberry extract you are in luck if not, you can make some at home with the recipe below I think it has more flavor. The other items that are prominent are dried strawberries, chocolate covered strawberries and the strawberry extract. So if you like strawberry flavor this may be a hit. I hope you like it.

1 box strawberry cake mix
1/2 cup vegetable oil
2 eggs at room temperature
8 ounces dried strawberries chopped small
2 teaspoons strawberry extract
1 bag chocolate covered strawberries

In a bowl add cake mix, vegetable oil and eggs. Mix for 3 minutes.

Add chopped strawberries to the bowl mix to incorporate.

Refrigerate for 30 minutes.

Heat oven to 350.

Scoop the dough on a parchment lined baking sheet.

Add chocolate covered strawberry to top.

Bake for 10-12 minutes.

Serve.

Strawberry extract – chop 4 fresh strawberries place in a jar with 3 ounces vodka. Refrigerate overnight. Use within one week.
