Pistachio Chicken

My brother Mike loves pistachios so I thought I would make a shortcut recipe for him. I combined the ground pistachios with a pack of Shake and Bake for a crunchy exterior. Now the flavor bomb part Dijon mustard, hot honey, vinegar and olive oil. I hope you like it.

4 chicken thighs
1/4 cup hot honey
1/4 cup Dijon mustard
1/4 cup olive oil
2 tablespoons vinegar
8 ounces ground pistachios
1 package of Shake and bake

In a bowl add Dijon, hot honey, vinegar and olive oil.

Heat oven to 375.

In a pie pan add Shake and Bake and pistachios.

Dip chicken into Dijon mixture and coat chicken.

Coat chicken in pistachio mix.

Place chicken on a baking sheet and place the n oven for 40-45 minutes. Internal temperature should be at 170.

Serve.
