Pickle Sandwich

Pickle sandwiches are a hot food trend right now and I decided to do a version of it myself. In the traditional one there is a pickle cut in half stuffed with ingredients after the seed hèhave been removed. Mine is nothing like that. I couldn’t find a small jar of whole pickles just one that would last me two years. If you can find a local pickle provider see if they can help. So I breaded pickle planks added beef bacon ham and cheese and voila a pickle sandwich. Add whatever condiments you choose. I hope you like it.

This is a three dip station recipe so you will need three pie pans.

1 cup rice flour
1 cup pancake batter
1 cup seasoned panko bread crumbs
4 pickle planks
2 slices beef bacon
2 slices ham
2 slices sharp cheddar cheese
Air fryer

In pan 1 add rice flour.

In pan 2 add pancake batter.

In pan 3 add pancake batter.

Fry beef bacon until slightly crispy.

Take pickle planks and dry on a paper towel.

Dip plank in rice flour. Then pancake batter. Then coat fully in panko breadcrumbs.

Add to air fryer and cook for 9 minutes at 350.

Remove to a paper towel.

Bacon strip
Fold cheese to fit
Fold ham to fit
Pickle plank
