Pesto Coated Barracuda

Let me start with my admission that you won’t get barracuda at your local mega mart. I found it on a lucky happenstance at A to Z Meat market. The texture is like swordfish and flavor is on the mild side. I topped it with the wasabi pesto recipe I did last week. If you wanted to substitute mahi or swordfish that would work too. I hope you like it.

16 ounces barracuda fillet thick cut.
1 teaspoon orange salt
1/2 teaspoon black pepper
4 tablespoons pesto recipe on the blog

Oil for cooking.

Heat oven to 350.

Salt and pepper fish.

Coat fish with cooking oil.

Heat oven safe skillet to medium.

Add fish and cook for 4 minutes.

Top fish with pesto.

Add pan to oven.

Bake for 15 minutes.

Serve.
