Summer time is abundance of fresh vegetables like radishes. I got some beautiful ones at the Stafford Farmers Market which I quickly snapped up. I did a quick pickle of apple cider vinegar, sugar, water and a pinch of salt. I used the microwave to get it to a quick boil. Let them sit for an hour. I hope you like it.
1 cup radish sliced in 1/8 inch slices use a Mandolin
1/2 cup apple cider vinegar
1/4 cup sugar
1/2 cup water
Wash and cut radishes.
In a microwave safe bowl add water, vinegar, salt and sugar.
Microwave for 90 seconds.
Add cut radishes to mixture and let rest for 1 hour.
Serve with fish or BBQ.
