Michigan White Fish Bagel

At many New York style deli’s they have bagels with with tomato, onion, cream cheese, pickled onion and smoked white fish which in delis can be any kind of flaky white fish. I’m from Michigan which means Lake Superior white fish slowly cold smoked to perfection. Now I put it on an everything bagel breakfast or lunch and you will have a great meal. I hope you like it.

6 ounces smoked whitefish meat
3 ounces mayonnaise
3 ounces crème, fresh
Salt and pepper to taste
2 tablespoons capers
1 tomato sliced
1/2 red onion sliced
1/2 cup apple cider vinegar
1/4 cup sugar
1/2 teaspoon salt
5 cloves
1 bay leave
5 pepper corns

Mix vinegar, sugar, water, cloves, bay leaf and pepper corns in a microwave safe bowl.

Microwave for 2 minutes and let sit for 20 minutes.

De-bone white fish and add to second bowl.

Add crème fresh and mayonnaise and mix.

Add salt, pepper and capers. Mix.

Slice tomato.

Toast bagel.

White fish dip
Pickled red onion

Serve.
