Elk Sausage Mac & Cheese

I got my annual package from Pinconning Cheese Company. It contained sharp Pinconning cheese and elk summer sausage. I made Mac and cheese. I had to feed a bunch of folks so this recipe fits a 9 x 13 pan. The ingredients include 4 cheeses and a crispy topping. Pinconning cheese has been used in the World Mac and Cheese competition and won 3 times. I hope you like it.

4 tablespoons butter
4 tablespoons flour
8 ounces elk summer sausage diced
4 tablespoons shallots minced
3 tablespoons minced garlic
24 ounces milk
12 ounces Pinconning sharp cheese grated
8 ounces cream cheese
8 ounces Colby Jack cheese grated
2 tablespoons Dijon mustard
1 tablespoons seasoning salt
16 ounces of dry elbow macaroni cooked per package directions
Topping
1 cup seasoned panko breadcrumbs
1 cup Parmesan cheese grated

In a large pot on medium add butter and melt. Add flour and cook for 4 minutes.

Add diced elk sausage and shallots. Cook for 5 minutes until sausage browns.

Add mustard and garlic and stir.

Add milk and let cook until it begins to thicken.

Add cream cheese and cook for 4 minutes.

Add Pinconning and Colby Jack to milk.

Cook until cheese is melted and smooth. Add seasoning salt.

Mix with cooked pasta.

Pour mixture into a 9 x 13 inch baking pan.

Heat oven to 350.

Top with Parmesan and panko mixture.

Bake for 25-30 minutes until top is brown.

Serve.
