Simple Chicago Beef Sandwich

When I live in Chicago I had my first Chicago beef sandwich watching “Da Bears”. I found out the passion for both the football team and the Chicago beef sandwich. It is simply roasted beef in an au jus which is not gravy on a sturdy bun topped with spicy giardenair. There are two simple rules with this sandwich 1. It is not a Philly cheesesteak. 2. It you didn’t change your shirt then you made it wrong. This all sounds simple but people pick wimpy bread or the wrong beef. You want great bread and of course roasted London broil. I hope you like it.

1 pound roasted London broil(medium rare)
1 quart au jus
4 sturdy hoagie rolls
8 ounces giardenaire

Place au jus in a sauce pan on medium heat.

Add London broil

Cook until beef is hot.

Cut opening in top of hoagie roll.

Add beef to fill roll and spoon on au jus to soak bread.

Add giardinaire to top to sandwich.

Serve.

Wash shirt.
