I love small plates or tapas dinners. This is a welcome addition to that tradition. Now if feel you want more heat you can use smaller jalapeños but I’m kind of a wimp. The honey goat cheese does provide a cooling effect. The bacon is of course bacon and by adding gives a salty, smoky element. I hope you like it.
4 large jalapeño peppers
12 ounces honey goat cheese
8 fresh figs diced
10 strips bacon from Holy Roots Farm
1/2 teaspoon black pepper
Heat oven to 400.
Open jalapeños on one side cutting off top.
In a bowl add goat cheese, black pepper and quartered figs. Mix.
Stuff jalapeños with goat cheese mixture.
Wrap jalapeños with bacon using the wide bacon parts to cover top. Wrap bacon around pepper.
Bake on a parchment lined baking sheet for 25-30 minutes until bacon is slightly crisp yet not shattered when cut or bitten. I hope you like it.
