Twice Baked Potato Latke

This is a brunch or special breakfast dish. In all honesty a way to use leftover twice baked potatoes. All it takes is the ingredients to make twice baked potatoes plus flour and an egg. So potato, cheese, sour cream, chives and seasoning salt. You don’t have to wait for a holiday for twice baked potatoes. I hope you like it.

2 cups grated potatoes
1/2 cup grated cheddar cheese
1/4 cup chopped chives
1 teaspoon Old Bay seasoning
1 teaspoon black pepper
3 tablespoons flour
2 large eggs
3 tablespoons sour cream
3 tablespoons butter
3 tablespoons cooking oil

In a bowl mix potatoes, cheese, chives, Old Bay seasoning, pepper, flour and mix.

Beat eggs and add to bowl. Add sour cream. Mix.

Heat a skillet to medium. Add butter and oil.

Make potato mixture into patties and add to pan.

Cook until brown, about 5 minutes; flip and cook on other side until brown. If you want a darker brown, cook a little longer.

Serve.
