This was a request from my eldest daughter. She s by me a picture of this dish and told me to give it a whirl. I have multiple tater tots on this blog but this idea had my interest. Now I cheated I used packaged tots as a base added smoked sausage and topped this the deviled egg filling in the top. I hope you like it.
1 32 ounce bag of tater tots
12 ounces smoked sausage rounds
12 egg yolks
1/4 cup mayo
2 tablespoons Dijon mustard
1/2 teaspoon white pepper
1 teaspoon chives diced fine
1 teaspoon hot sauce
1 teaspoon paprika
In a bowl mix egg yolks, mayo, mustard, white pepper and chives; mix until smooth.
In an oven cook tater tots and smoked sausage until hot about 18 minutes.
Place tater tots flat on a plate top with a slice of smoked sausage.
Pipe on deviled egg mix.
Top with paprika.
