Shroom Blooms

When at the Warrenton Farmers Market last week, I stopped at my mushroom guy, Waterford Run Forge and Farm; he had some great looking mushrooms. What to do with them? I had an idea to make them like a bloomin’ onion since they were all in one piece. I used a pancake batter then covered it in panko breadcrumbs. I used some mushroom powder to up the umami factor. I hope you like it.

12 ounces oyster mushrooms
2 cups pancake batter
1 tablespoon mushroom powder
2 cups rice flour
1 teaspoon garlic powder
1 teaspoon Old Bay seasoning
2 cups seasoned panko breadcrumbs
1 cup remoulade sauce

In pan 1 add rice flour and mushroom powder.

In pan 2 add pancake batter, Old Bay seasoning and garlic powder.

In pan 3 add panko breadcrumbs.

Take mushroom clumps and coat well in rice flour pan.

Dip mushroom clumps in pancake batter pan.

Dredge mushroom clumps in panko breadcrumbs coating totally.

Preheat air fryer to 350 for 5 minutes.

Add mushroom clumps to air fryer basket.

Spray mushroom clumps with cooking spray

Cook at 350 for 9 minutes.

Remove from basket to a paper towel.

Serve with remoulade sauce.
