Oyster Stuffed Mushrooms

Fancy football food or new Hors d’oeuvres. We This is something my oldest would hate; allergic to shellfish and hates mushrooms. For the rest of us it has a fried Italian herb oyster, capers, and Parmesan cheese. I used large cremini mushrooms to hold more goodness. I hope you like it.

12 cremini mushrooms stems removed
1 quart select oysters drained
1 cup flour
1/2 cup rice flour
1 tablespoon everything Italian seasoning
1 tablespoon Old Bay seasoning
1/4 cup Parmesan cheese
2 tablespoons capers
1/2 stick butter
3 tablespoons oil

Heat oven to 350.

Place mushrooms opening side up cook for 10 minutes.

Drain liquid from mushrooms.

In a pie pan add flour; rice flour, everything Italian, and Old Bay.

Dredge oysters in flour mix.

Add butter and oil in a medium skillet cook until butter starts to bubble.

Add oysters and brown on both sides.

Remove to a paper towel to drain.

Add enough oysters to fill mushrooms.

Place mushrooms on a baking sheet and place in oven for 8-10 minutes until cheese browns.

Serve.
