Hawaii Bowl Cookies

We have baked 30 dozen Christmas cookies. Warm spices, holiday looks and tastes. Enough. We have been getting snow and cold, and I’m tired of all this stuff . I’m headed to Hawaii, at least in a cookie. I am going to bring some tropical flavors and ingredients to make a cookie that will take me to some place warm and sunny. I will be back in time for Christmas, but my mind is focused on pineapple, coconut, and macadamia nuts with some white chocolate for good measure. I hope you like it. The Hawaii bowl is December 25th.

2 1/4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
2 sticks butter
3/4 cup brown sugar
3/4 cup white sugar
2 eggs
1 teaspoon spiced rum
1 cup white chocolate
1 cup chopped macadamia nuts
1/2 cup shredded coconut
1/2 cup dried pineapple, diced

In bowl 1 add flour, baking soda and salt and mix.

In bowl 2 cream butter, sugar, and brown sugar until smooth.

Add eggs and mix until combined.

Mix bowl 1 into bowl 2 in three installments.

Add rum and mix.

Heat oven to 350.

Add nuts, white chocolate, coconut, and pineapple. Mix until combined.

Refrigerate for 30 minutes.

Spoon cookie dough on a parchment- lined baking sheet.

Bake for 9-11 minutes.

Let cool for 15 minutes.

Serve.
