This dish reminds me of my days living in Tampa and the bounty of seafood I used to get. Conch when in season was easy to get and now can only get it when it’s available at my local mega market. I air fried it with another Florida treat fried plantains. Topped with some black beans, veggie slaw and remoulade sauce I felt I was back on the Causeway. I hope you like it.
1 pound conch cleaned foot removed.
8 ounces mango juice
Juice of 2 limes
1 shallot diced
1 tablespoon diced red pepper
8 ounces flour
4 ounce rice flour
2 teaspoons Old Bay seasoning
1 teaspoon garlic powder
8 ounces black refried beans
8 soft taco wrappers
8 ounces Maduros
8 ounces veggie slaw
4 ounces remoulade sauce
Pound out conch and other a meat mallet after removing foot. It’s chewy.
Mix mango juice, onions, bell pepper and cleaned conch.
Refrigerate for 30 minutes.
Mix regular flour, rice flour, Old Bay, garlic powder and taco mix.
Drain conch and toss in flour.
Preheat air fryer to 340 degrees.
Heat black refried beans.
Add conch to air fryer and cook for 7-8 minutes.
Heat soft tacos wrappers for 15 seconds in the microwave.
Heat maduros in microwave for 30 seconds.
