This got all confused, but it tasted great. I was trying to update Chicken Cordon Bleu and when I got done, it had nothing to do with Cordon Bleu. My first change was to ditch the chicken for rainbow trout. Then I upgraded the ham for smoky bacon which is always an improvement. Then I added blue cheese instead of the normal Swiss cheese which would have been lost next to the bacon. Lastly, I coated the whole thing in ground French fried onions; the simple seasoned flour would be boring with everything else going on. So it’s not Cordon Bleu. I hope you like it.
4 6-8 ounce rainbow trout fillets about the same size
1 teaspoon Old Bay seasoning
1/2 teaspoon garlic powder
4 strips crispy bacon
6 – 8 ounce blue cheese
8 ounces ground French fried onions
Place blue cheese in freezer for 15 minutes.
Remove skin from trout.
Heat oven to 375.
Sprinkle trout with Old Bay and garlic powder.
Place two fillets on a parchment-lined baking sheet.
Top with crispy bacon and slices of frozen blue cheese.
Add remaining fillets to top trout fillets.
Coat top with French fried onion powder.
Spray with cooking spray.
Bake for 20-25 minutes.
Serve.
