I did something like this a couple of years ago. It was 11 degrees yesterday so using the smoker covered in ice seemed, well, stupid. I’m not freezing my ass off for BBQ. Let me say the results were very good but not as good as on the smoker. I used Poppi’s BBQ seasoning some Old Bay and some others seasonings to get the BBQ taste. I did them slow in oven at 290 degrees so the were almost fall off the bone. I hope you like it.
3 pounds beef back ribs (make sure they have some meat on them)
4 tablespoons mustard
1 cup brown sugar
2 tablespoons Poppi’s chili seasoning
1 tablespoon paprika
2 tablespoons kosher salt
1 teaspoon cayenne pepper
1 teaspoon cumin
1/2 cup Tuffy Stone BBQ sauce
In a bowl mix brown sugar and all the spices.
Coat ribs with the mustard.
Coat ribs with rub.
Heat onion to 290.
Place ribs in a pan and place in oven.
Cook for 2 hours.
Coat ribs with BBQ sauce. Cook for an additional 30 minutes.
Remove ribs when they start to pull away from the bone.
Serve.
