Cowboy Cookies

I have had my attention pulled away from my quest to do the famous recipes from each state. Today I put my spin on Wyoming’s cowboy cookies. Now the big ingredients are coconut, chocolate chips, pecans, and vanilla all of which were available at every trading post on the Great Plains. Not. It’s still the state cookie of Wyoming so I did replace the vanilla with bourbon which a cowboy may have had. I hope you like it.

1 cup butter
1 cup sugar
1 cup brown sugar
2 teaspoons bourbon
2 eggs
2 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
3/4 cup chopped pecans
3/4 cup shredded coconuts
3/4 cup dark chocolate chips

36 cinnamon sugar coated pecans

In bowl 1 cream butter, brown sugar and sugar using a mixer on medium low.

Add eggs and beat until combined.

Add bourbon and mix.

In bowl 2 mix flour, baking powder and salt.

Add bowl 2 into bowl 1 in three parts mixing after every addition.

Add add chocolate chips, coconut, and pecans and add. Mix until incorporate.

Heat oven to 375.

Scoop dough on a parchment-lined baking sheet.

Bake for 9-11 minutes until edges start to brown.

Press cinnamon sugar pecans on top of cookies.

Let cool.

Serve.
