I have a source for Farrow Island salmon which is much better than the chemical color added farm raised salmon. I wanted a tuna melt but switched that out for salmon. I added some lemon butter sauce, capers for a briny flavor, and finished with havarti cheese. This is not as dry as canned tuna. I hope you like it.
12 ounces Farrow Island salmon (A to Z Meats)
1 teaspoon Old Bay seasoning
4 ounces lemon dill butter sauce
3 tablespoons capers
2 English muffins
4 slice’s havarti cheese
Cooking oil or butter.
Sprinkle salmon with Old bay cut into 1 inch cubes.
Heat a skillet to medium add oil.
Add salmon can cook until brown on all sides.
Toast the English muffins.
Add lemon butter dill sauce.
Add capers cook for 2 minutes.
Add salmon to top of English muffins.
Top with havarti and place under the broiler for 3 minutes until cheese is melted.
Serve.
