Baked Sheepshead

This is not what you think from the title. I know you are picturing the Indian Jones Temple of Doom dinner scene. Sheepshead is considered a junk fish with a strong flavor. How to make this tasty? that is the goal. I went with seasoned breadcrumbs with Parmesan cheese, and a lot of wine and lemon to get rid of the strong flavor. I hope you like it.

1 pound sheepshead
2 tablespoons lemon juice
1/4 cup white wine
1/2 cup panko breadcrumbs
1/4 cup mayonnaise
1/2 cup Parmesan cheese
1 teaspoon Old Bay seasoning
1 teaspoon oregano
1 teaspoon basil
1 teaspoon parsley
1 teaspoon black pepper
1/2 teaspoon red pepper flakes

Pick the bones out of the sheepshead.

In a bowl mix panko breadcrumbs, Parmesan cheese and all the spices.

Coat fish with mayonnaise.

Dredge fish in breading mixture and coat thoroughly.

Heat oven to 350.

Place fish on a Foil lined baking sheet and add to oven.

Bake for 20-24 minutes. Fish will begin to flake.

Serve.
