Cuban Sandwich Pickle

I had done something similar a while back but I decided I should have done this one because in the Cuban sandwich the pickle is a star. In this recipe the pickles are the backbone. It has the regulars in a Cuban; ham, smoked Canadian bacon, Swiss cheese, mustard wrapped and bacon to wrap. The crash test dummies all loved the air fried goodness. I hope you like it.

Dill pickles
1/2 pound ham
1/2 pound smoked pork loin
1/2 pound Swiss cheese
Yellow mustard
Bacon to wrap

Cut pickles in half and remove seeds.

Cut ham and Canadian bacon in strips and then dice.

Cut Swiss cheese in strips and then dice.

Add meat and cheese in bowl and mix.

Add mustard to pickle.

Add meat and cheese mixture to pickle half over filling and top with second pickle half.

Wrap with bacon strips and secure with a toothpick.

Preheat air fryer to 350 for 4 minutes.

Add bacon wrapped pickle to the air fryer and cook for 12 minutes. Check on cheese leakage and doneness.

Cook for an additional 10-14 minutes until bacon is done.

Serve.
