I try to keep these introductions short, but in this case I have too much back story. There was a restaurant named Susie Q which my mom was a manager at for 30 years. They were famous for their fish and chips. They had other items: cheesecake, burgers, and deep fried lobster. Yes, deep fried lobster!
This was in the 60’s and 70’s before Julia Child made lobster desirable. Before her, most lobster was given to inmates in Maine. It was a garbage species bait for other things. Because of that, a fried lobster tail sold for $1.50. Not one of those 3 ounce tails the grocery sells but an 8 ounce tail. Deep fried and delicious. I hope you like it.
4 4-ounce lobster tails (shell removed)
2 cups pancake mix plus 1/2 cup for dredging
2 eggs
1 1/2 cup milk
1 tablespoon oil
1 teaspoon Old Bay seasoning
1 teaspoon garlic powder
1 teaspoon salt substitute
Cocktail sauce
In a bowl mix pancake mix, Old Bay, garlic powder, eggs, milk, salt substitute and oil. Mix well.
Heat oil to 350.
Dredge lobster tail in dry pancake mix.
Dip lobster tails in pancake batter.
Add tails to hot oil and fry until golden brown.
Drain on paper towel.
Serve.
