Shrimp Scampi Stuffed Mushrooms

An elegant appetizer for any gathering. Stuffed mushrooms are a staple but the addition of the scampi makes it more exciting. The panko Parmesan topping give a little crunch to go with the garlicky filling. The hidden star is the basil which gives the dish some needed freshness. I hope you like it.

10 large cremini mushrooms
1 pound peeled deveined shrimp 26-30
1 stick butter
1/2 cup basil leaves
1 teaspoon black pepper
2 tablespoons lemon juice
1 tablespoon Dijon mustard
1/4 cup white wine
1/2 cup panko breadcrumbs
1 teaspoon Old Bay seasoning
1/2 cup Parmesan cheese

Heat oven to 350.

Remove mushroom stem and clean mushrooms.

Add mushrooms to a sheet pan and bake for 10 minutes. Drain all water in centers.

Melt butter.

Chop shrimp into small pieces.

Chop basil fine.

In a bowl add shrimp, basil, Parmesan cheese, melted butter, Seasoning salt, Dijon mustard, pepper, garlic, and panko breadcrumbs.

Add wine and lemon juice.

Mix all non mushroom ingredients and stuff mushroom with shrimp mix.

Bake for 12-14 minutes until brown on top.

Serve.
