Fried Fish (not the Q version)

I LOVE fish and chips.  As many of you know my mon managed the Susie Q for years and they were famous for their fish and chips.  This is not that recipe.  One I don’t fry with lard,  that recipe may be lost in time but this will give you a crispy crust and moist fish inside.  I came up with this because I can’t find a Lentin fish fry in Northern Virginia.

1 1/2 pound cod
1 cup flour
1 teaspoon spoon corn starch
3 tablespoons rice flour plus 1/2 cup for dredging
1 tablespoon old bay seasoning
1 tablespoon baking powder
16 oz milk

Or leave out the milk and baking powder and use 16 oz of  stout beer.

2 quarts vegetable oil for frying

Cut fish into 3 inch long pieces

Heat oil to 350

In large bowl mix flour, corn starch, rice flour, old bay seasoning, and baking powder.
Add milk whisk until smooth

Dredge fish pieces into rice flour

Dip pieces in batter mix

Fry in oil 5 minutes flipping once until fish is golden brown

Drain on wire rack on a sheet pan

Sprinkle with salt and pepper while still hot

Serve with fries and coleslaw and malt vinegar  the fry recipe will come later.
