Tortillas

This one I have to credit my friend, Beth from Manassas VA.  She game me this recipe, and she said she got it from her son-in-law’s mom.  I think she got it from her cousin’s uncle’s former college roommate.  That’s just a guess.

3 cups flour,
one tsp salt
1/3 cup Crisco
1 cup warm water
Mix together flour and salt. Cut in Crisco
Add 1 cup water and mix until it comes together
Need  5 minutes
Cover and rest 1/2 to 2 hours the longer the better
Divide into 12 portions and roll each into a circle

Roll them thinner than you think or they will be doughy

Place each circle 1 by 1 onto a hot skillet sprayed with cooking spray
After it starts to puff, flip it to cook the other side and then remove it to a plate
Keep them covered with a towel as you finish cooking the rest.

Rub
2 teaspoon cumin
1 teaspoon chipotle powder or chili powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon paprika

1 teaspoon salt I use a teaspoon because I am trying to cut down on salt.

Mix all spices together

1 pound chicken or ribeye steak
Olive oil for cooking
1 large onion cut into strips
1 green pepper cut into strips
1 red pepper cut into strips
1/2 jalapeño pepper

Cut chicken into strips coat with spice mix
Heat skillet to medium high
Add oil
Add peppers and onions
Cook until slightly browned
Remove
Add oil
Add chicken
Brown chicken about 3 minutes on all sides until temp reaches 165
Add onions and peppers
Serve on tortillas

Beef
Cut steak into 1/4 strips
Coat in seasoning mix
Cut onion into strips
Cut green pepper into strips
Cut red peppers into strips
Heat skillet to medium high
Add oil
Add onions and pepper
Cook until lightly brown but still crunchy
Add beef
Cook until desired doneness
Serve on tortillas see above

A lime wedge will make it better so  will salsa, sour cream and guacamole
