Mushroom Swiss Sliders

Out of high school I worked at Lums on Woodward Ave.  (I know a couple of you came by for a beer or three.)  They were known for their hot dogs and burgers.  Their biggest seller was the Ollie burger but my favorite was the mushroom swiss burger.  Here is my take on that classic.  Hope you like it.

Burger
1 pound ground ribeye or 80 /20 ground beef
Salt to taste
Pepper to taste
Garlic powder light dusting
Onion powder light dusting

Mushroom sauce
1 package mushrooms
1 tablespoon light soy
4 oz wine (nothing too fruity)
4 tablespoon butter
3 tablespoon olive oil
2 tablespoon flour(I use rice flour)
Salt
Pepper to taste

Swiss cheese
Slider buns
Mayo optional
Red onion garnish

Cut mushrooms into slices
Heat skillet to medium
Add butter and oil to pan
Add mushrooms
Cook until mushroom are brown and have given up their moisture
Add soy sauce
Add flour let cook until flour browns
Add wine stir until thick if too thick add more wine (but you want it thick or you’ll have to eat it with a fork and where’s the fun in that

Season burgers and grill until desired temp
Place on bun
Top with mushroom sauce
Top with Swiss cheese
Add mayo and onion
Serve
