I love Sunday breakfast. Here is one of my favorites it has Spanish feel. Hope you like it.
1 pound baby potatoes I used white but red work great too.
1/2 pound chorizo sausage (I used Rainbow Acres Farm http://www.rainbowacresfarm.com
1 green pepper medium dice
1 red onion medium dice
1 zucchini medium dice
1 tablespoon butter
2 tablespoons olive oil
1/2 teaspoon paprika
1/2 garlic powder
Salt and pepper
1/4 cup Romano cheese or cheddar
1/4 fresh parsley
In large skillet (I like cast iron) on medium heat cook chorizo to render fat
Remove sausage and drain leaving fat in pan
Add oil and butter
Add potatoes salt and pepper
Cook for 5 minutes and leave alone to form crust
Add onion and green pepper
Turn potatoes over and press with spatula
Cook for two minutes add spices
Add zucchini flip potatoes
Add cheese
Cook for 4 minutes make sure that the potatoes are soft
Add parsley
serve
