Sausage Gravy with Cheese Hash Browns

It’s fall and on the weekends I love a hearty breakfast.  Biscuit and sausage gravy is a huge favorite of mine but I crave potatoes so I’m the interest of not over doing it with carbs I use the hash browns as the base.  So here is my Sunday breakfast I hope you like it.  http://www.dansfooddiary.com
Gravy
1 pound sage sausage I used Rainbow Acre Farm Bristow VA
2 tablespoons flour
1 cup milk
2 teaspoon chives
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper
1/4 teaspoon paprika
1/2 teaspoon garlic powder
and Butter maybe
brown sausage check you will need two tablespoons of oil from sausage add butter to make up for any deficiency
Add butter
Add flour until liquid turns light brown and flour is incorporated
Add 1/2 the milk stir for 5 minutes
Add remaining milk
Cook until it thickens
Hash browns
3 large russet potatoes microwaved and shredded
3 tablespoon olive oil
1/2 cup cheddar cheese
1/4 cup fine chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
3 oz butter
in a 10 in skillet on medium heat
add olive oil
Mix onions and potatoes
add salt and pepper
cook until bottom bottom is brown and crispy about 6-7 minutes
flip potatoes
add butter to top
Cook until bottom is crispy
top with cheese
serve top with gravy
