This how I remember my Dad’s meatloaf recipe until I changed it. I called my brothers to check out if I got it right, but we’re old and no one remembers exactly. We all agree that there was ground beef. We all remembered the next day meatloaf sandwiches on pumpernickel bread. I also make it smaller since we were feeding 7. This is sorta classic with some updates. I hope you like it.
1/2 pound ground veal
1/2 pound ground pork
1/2 pound ground beef
1/2 pound ground beef
1/4 cup parmigiana cheese (We used the cheese flavored sawdust in the green can)
1/2 teaspoon season salt
1 teaspoon pepper
1 small onion diced
2 chopped garlic
1/2 cup Panko breadcrumbs- unseasoned
1 teaspoon cayenne pepper
1/2 teaspoon season salt
1 teaspoon pepper

1 jar 12 oz hoisin sauce
1 large egg
2 tablespoons parsley (My brothers say what the hell am I thinking)
4 strips of bacon

16 oz baby potatoes
Preheat oven to 375
Mix meats together – this is one where you use you hands
Add cheese
Add chopped onions and garlic mix
Add eggs and mix
Add bread crumbs mix
Add salt and pepper
Add parsley
Add hoisin mix
Shape mixture into a loaf on a sheet pan; make sure it has a rim to catch the dripping
add the potatoes after piercing them with a fork
top with hoisin sauce
Top with bacon strips
Top with bacon strips
Bake 70 minutes
