My brother Mike called me and joked that he was choking on a microwave meat filled pastry, and I should do a recipe on the blog.
That got me thinking (a dangerous pastime I know).
Leslie version(vegetarian) and a Daddy person version. I will repeat a tip: butter! butter! butter! or you will have fly away phyllo. Also, remember phyllo rips easily so be careful; if it gets too annoying, go to puff pastry.
Leslie Version Hot Pocket:
Ingredients
10 sheets phyllo dough cut in half (makes 2 hot pockets)
Butter (you will need a lot of melted butter)
3 pears

1/2 cup walnuts
3 tablespoons honey
1/2 teaspoon cinnamon
2/3 cup goat cheese

Coat each phyllo sheet lightly with butter (but more that you think or you will get fly away phyllo when it cooks)
Stack 5 sheets (that is, phyllo sheet, butter, phyllo sheet, butter, etc.)
Put pear slices on phyllo stack
Mix honey and cinnamon, then drizzle over pears
Add goat cheese and walnuts
Stack 5 sheets (that is, phyllo sheet, butter, phyllo sheet, butter, etc.)
Put pear slices on phyllo stack
Mix honey and cinnamon, then drizzle over pears
Add goat cheese and walnuts
Stack 5 more sheets (that is, phyllo sheet, butter, phyllo sheet, butter, etc.) on top of pears, cheese, and walnuts
Trim the excess dough on the sides and top.
With a fork, press the edges together on all sides
Bake at 350 for 15 to 18 minutes
Daddy Version Hot Pocket:
8 oz ham or turkey (go to the deli, not the package stuff unless you have to)
6 oz Swiss cheese slices
Dijon mustard (creole mustard is also great or any other thing you like except thing)s that contain egg like mayo
pickle plank
10 sheets phyllo dough cut in half (makes 2 hot pockets)
Coat phyllo sheets with melted butter (see Leslie version)
Stack 5 sheets (that is, phyllo sheet, butter, phyllo sheet, butter, etc.)
Put ham or turkey on phyllo stack
Put cheese over ham or turkey
Put ham or turkey on phyllo stack
Put cheese over ham or turkey
Place pickle on top of cheese
Drizzle with mustard
Stack 5 more sheets (that is, phyllo sheet, butter, phyllo sheet, butter, etc.) on top
Trim the excess dough on the sides and top.
With a fork, press the edges together on all sides
Bake at 350 for 15 to 18 minutes
