Apple and parsnip sauce

I have been told (repeatedly) that I don’t have enough healthy ideas on the blog.  So in the interest of making the public happy, I will start hiding more veggies in my cooking. (Let’s  see how long this lasts.) So I have kicked up the healthy on apple sauce by adding parsnips. This adds fiber and vitamins.  Your kids will never know you pulled a fast one.  I hope you like it.

6 large honey crisp apple cut into 3/4 inch pieces
4 parsnips cut in 1/2 inch pieces
1 1/2 cup apple juice or cider
1 teaspoon cinnamon
1/4 cup honey
1 tablespoon lemon juice
1 pinch salt

In a large sauce pan, add all ingredients
Cook for 35 minutes or until everything is soft
With an immersion blender mix until smooth
