I love a properly cooked lamb chop. Here is my take on lamb with a sweet apricot and sour balsamic glaze. It’s simple but tasty. I hope you like it.
4 lamb t-bone chops 1 1/2 inches thick
1/4 cup balsamic vinegar
4 oz apricot jam
Salt and pepper
3 tablespoons olive oil
Preheat oven to 350
Salt and pepper chops on both sides
Heat cast iron skillet on medium until pan is smoking
Mix jam and vinegar in bowl with whisk
Add chops to pan cook for 2 minutes
Turn chops
Brush chops with glaze cook for 2 minutes
Brush chops with glaze for second time
Place chops in oven for 10 minutes
Check temp should read 130 remove from oven let rest for 10 minutes
Serve with veggies
