Palmer House Brownies

Pop quiz.  Where did the birth of the brownie happen?  If you said Chicago, you win. (Actually, we all win — the world is a better place with brownies.) It started at the Palmer House for the 1896 World’s  Fair as a desert you could walk around the fair with.  I made a couple of changes.  I did away with the gluten by using coconut flour.  I also upped the vanilla, lowered the sugar and did away with the apricot preserves so traditional yet updated.  I hope you like it.
6 oz dark chocolate chips (one cup)
3/4 cup sugar
2 sticks butter
1/2 cups coconut flour
1/4 salt
1 teaspoon vanilla
4 eggs
3/4 cups walnuts, crushed
Mix together sugar, salt and flour
Melt chocolate and butter in double boiler and combine well
Add flour and sugar to chocolate
Whip eggs for 3 minutes until a light yellow
Add eggs to chocolate mixture
Beat for 2 minutes
Butter 8 x 8 pan and line with parchment
Place batter in 8 x 8 pan
Add walnuts and press into batter
Bake for 35- 40 minutes at 300
