Easter Nest Cookies. These little guys were harder than they look. The original idea was an Easter basket cookie. Since I was going for fast and simple, I used sugar cookie mix, but that’s where things went sideways. I was going to use the mini muffin tray, but it was missing. (Do either of my daughters want to fess up?) So I tried to use the the mini baked donut pan, but things really stick to that one. So I called in my wife to decorate, and they look good. Frosting hides a multitude of baking sins. This a just a little Easter cheer. Hope you like it.
1 package sugar cookie mix
2 tablespoons flour
1/2 teaspoon baking soda
1 stick butter
1 egg
Mix all above ingredients and beat until combined
Preheat oven to 370
Spray mini muffin pan with Pam
Place small amount of dough in each space and press to sides to make a hole. (Remember, you need enough structure to form a nest)
Bake for 11-13 minutes (you need them crunchy)
Frosting:
1/2 cup butter (one stick)
1 teaspoon vanilla
2 teaspoon milk
2 cups powdered sugar
4 drops of food coloring
