Lamb Steaks with Pesto and Provolone

Since we didn’t have plans for Easter this year and it was just the two of us, we didn’t have need of the big ham and trimmings.  So I decided to make myself some lamb steaks.  This is a simple  recipe that really brings the flavor with the pesto and the gooey cheese.  I hope you like it.
Pesto:
1 cup cilantro
2 cloves garlic
1 cup basil (leaves only)
1/2 cup walnuts
1/2 cup Parmesan cheese
1/2 cup olive oil
1/4 teaspoon salt
1/4 teaspoon pepper
In a blender, chop garlic, cilantro, and basil
Add walnuts and Parmesan; blend for 30 seconds
Add salt and pepper and olive oil; blend until smooth
2 lamb shoulder chops, 1/2 inch thick
4 oz pesto
4 slices provolone cheese
Salt and pepper
Olive oil
Heat oven to 350
Cover one side of lamb with pesto
Heat skillet to medium (must be medium!)
Coat pan with olive oil
Place lamb pesto side down and cook for 3 minutes
Coat second side with pesto
Place pesto side down for 2 minutes
Add enough provolone to cover
Place in preheated oven for 8-10 minutes
until internal temperature is 130
Serve with veggies
