My family has always been fans of eggroll wrappers. My kids could wrap an eggroll from the time they were 3 (and they are better at it than me; you should see them with wontons). There are usually 20 wrappers per pack, so you always have some leftover, so I figured why not use them for dessert? I love apples, so I did an apple pie filling. It’s tastier than the Mickey D type. Some caramel sauce and time in the air fryer and we have a easy dessert.
2 cups diced large Granny Smith apples
4 tablespoons brown sugar
1 teaspoon cinnamon
1/2 teaspoon ginger
1 tablespoon lemon juice
Water to seal egg rolls
Egg roll wrappers
1/2 cup sugar
1 teaspoon cinnamon
Mix apples, lemon juice, brown sugar, and cinnamon in a 1 quart bowl
Place 1 teaspoon of mixture in egg roll wrapper
Dampen all sides of the wrapper with water
Roll the wrappers: fold the bottom corner over the filling; fold in both side, then tightly roll towards the top corner
Spray with cooking spray
Place egg rolls in an air fryer and bake at 350 for 7 minutes
Flip and cook an additional 7 minutes at 350
Let cool for 5 minutes
Mix sugar and cinnamon
Roll cooled egg rolls in cinnamon mixture
Do Not Bake!
Fry or Air Fry!

Caramel dipping sauce:
1 cup brown sugar
1/4 cup butter
1/4 cup sugar
1/4 cup cream
1/4 cup water
Mix brown sugar, sugar, butter and water in a 1 quart sauce pan on medium
Bring to a boil
Let it boil for 4 minutes
Add cream and stir for 1 minute
