Here is a nice Sunday breakfast or brunch. It’s a little spicy and has great flavor. I cheated with the store bought tortillas, but I figured it was only for me. So wake up to salty, crunchy, tomatoey, spicy and creamy. Hope you like it.
1 pound chorizo (I used Happy Family Ranch from the Manassas Farmers Market http://www.happyfamilyranch.net)
1 can refried black beans
1/2 white onion
1 teaspoon hot sauce
2 tomatoes, diced
1 green pepper (I used a cubenelle pepper)
1 jalapeño pepper, seeded (Go ahead and use the seeds if you like heat)
1 bunch cilantro
2 cloves garlic
2 teaspoons lime juice
2 tablespoons olive oil
Your favorite tortilla chips
4 eggs
Some cooking spray for the eggs
Sour cream
Add tomatoes, cilantro, onion, garlic, and peppers in to a food processor and do a few quick blasts; add lime juice and blast
In a large skillet on medium heat, add olive oil
Add tomato mixture; cover and cook 10 minutes
In second skillet, brown chorizo
In another pan, heat black beans on medium low
Smush the black beans
Add chorizo to tomato mixture and cover keep on low
Cook eggs sunny side up
Assembly:
Place a layer of chips
Top with beans
Add tomato mixture
Add two eggs
Add a little more tomato mixture
Add dollop of sour cream
Add cilantro
