This is a simple and easy weeknight dinner. It’s also cheap. So make something you don’t eat often and doesn’t have a lot of clean- up.
1 pound smoked sausage cut in half
1 green pepper sliced into strips
1 red pepper sliced into strips
1 white onion cut into strips
6 tablespoons cooking oil, divided
In a large skillet on medium heat add 3 tablespoons of oil
Cut sausage length wise
Add sausage to pan brown on both sides
Remove sausage from pan
Add remaining oil
Add peppers and onions to pan
Re- introduce sausage on top of pepper
Cook for 4 minutes, then stir
Cook peppers until slight brown
Move the sausage to the bottom of the pan
Cook for 4 minutes
Serve
