Ricotta Cheese Toffy and Chocolate Piece Ice Cream

I scream…You can go through that poem on your own time.  It’s summer; I want ice cream but don’t have an ice cream maker.  I do have a set of beaters.  I had my daughter try this first, and she gave it high marks.  I know you’re going say “ricotta cheese?” but think about it – cheese started as milk, so relax.  It’s thick and creamy.  Hey is not Bob and Terry’s but it’s ice cream.   I hope you like it.
16 oz whipping cream
16 oz ricotta cheese
1 15 oz. can sweetened condensed milk
2 teaspoons vanilla
3 oz chocolate bar, chopped
3 oz toffy candy pieces
1/2 teaspoon salt
Whip cream in a cold bowl until. stiff peaks form, set aside
In separate bowl, whip ricotta for one minute
Add sweetened condensed milk, vanilla, and salt to ricotta, mix for 5 minutes
Fold in whipped cream, make sure it’s completely mixed
Add chocolate and toffy pieces (my (daughter added Oreo cookie pieces)
Freeze 4 to 6 hours
Serve
Makes 2 quarts
