Loco Moco

This is Hawaiian comfort food without the Spam – a favorite for a working person’s lunch. There are lots of versions of this dish, but I kept it more comfort and less gourmet.  I best describe this as Salisbury steak with an Asian twist.  Savory gravy, runny egg yolk, beefy patty all on a bed of rice.  I hope you like it.
1 pound 80/20 ground beef
2 cups rice, cooked
1 onion, chopped (1/2 for beef, 1/2 for gravy)
1/2 cup Panko bread crumbs
1 egg for patty mix
4 eggs for the toppers
6 cremini mushrooms, sliced
3 teaspoons olive oil
1 bunch green onions
3 tablespoons Worcestershire sauce
1/2 teaspoon black pepper
1/2 teaspoon salt
1 cup beef broth
2 tablespoons butter
2 tablespoons flour
1 avocado cut into wedges
Mix ground beef, bread crumbs, 1 egg, 1/2 the onions, 1 tablespoon Worcestershire,  and make 4 patties
Cook the hamburger patties until they reach 165 internal temp and remove from the pan
Melt butter in pan
Add oil and mushrooms to pan
Cook until the mushrooms brown
Add remaining onions
Cook for 4 minutes, stir occasionally
Add pepper
Add remaining Worcestershire
Add flour and cook for 4 minutes
Add broth and cook until it thickens
Add beef patties until warm
In another pan, cook eggs sunny side up
In a bowl, place a scoop of rice
