This is a simple, tasty fish dish. It should take all of 40 minutes to make. This dates back to my Grandma Wines who loved rainbow trout at Mountain Jacks. I hope you like.
2 rainbow trout, boned (I got mine at Crosby’s Crabs)
4 oz crab meat (Crosby’s Crabs)
2 Ritz crackers, crushed
1/2 teaspoon Old Bay seasoning
1 teaspoon mayo
4 teaspoons butter, melted
2 tablespoons white wine
1/2 onion, sliced thin
1 lemon cut into 6 slices
Preheat oven to 350
Stuffing:
In a small bowl, add crab meat, mayo, Old Bay, Ritz crackers and mix
Place tin foil on a baking sheet
Open trout and place on baking sheet
Add sliced onion
Add lemon
Add crab stuffing
Add wine
Add half of butter
Close trout
Top with remaining butter
Bake for 25 -30 minutes
Serve with coleslaw
