I have always wanted to work with Meyer lemons; I knew about them but never found them at my local mega-mart. I was at Wegman’s today, so I grabbed a few and got my baking clothes on. Cookies it is.
So here is my take on Meyer lemon cookies (not to worry – I’ll get to lemon bars). I went small batch in case you can’t find enough Meyer lemons.
Dry ingredients:
1 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ginger
3/4 teaspoon cardamom
Wet ingredients:
5 oz unsalted butter at room temperature
1 egg
3 teaspoons Meyer lemon zest
1/2 cup sugar
2 tablespoons Meyer lemon juice
1 teaspoon rum
Topping:
1/2 cup sugar
1/2 cup powdered sugar
Preheat oven to 350
In bowl one. mix flour, baking powder, salt, ginger and cardamom
In bowl 2, cream butter and sugar for 3 minutes
Add egg and mix
Add rum, Meyer lemon juice and zest
Beat for 3 minutes
Refrigerate for 30 minutes
Mix powdered sugar with regular sugar
Make 1 1/2 inch balls of cookie dough
Roll in sugar
Place on parchment-lined cookie sheets
Bake for 12-15 minutes
Let cool
Glaze:
2 tablespoons Meyer lemon juice
1 teaspoon lemon zest
1/2 cup powdered sugar
Mix all ingredients
Drizzle over cookies




I have to drive an hour one way to find Meyer’s Lemons. 🤦🏼♀️
